WHere is an easy take on a cocktail from our latest menu. It's a batch pre-mixed that's packed with flavours of the holiday season, rendering it perfect for hosting a festive gathering. Reserve the remaining cordial for breakfast cocktails, puddings, or to make additional servings of this cocktail.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Place all the components inside a pan, heat until it reaches a simmer, stirring to dissolve. After that, turn off the stove and let it to reach room temperature fully. Pour into an sealable bottle, seal keeping it chilled, where it will keep for up to four weeks.
For the Premix: Pour the specified liquids in a sizeable container, allow it to infuse for 60 minutes, then filter it best through muslin, making it completely strained.
For serving: Add 85ml of your batch mix into a stirring glass containing ice, gently stirring carefully for one minute to cool it down. Pour to a frosted cocktail glass or equivalent, top with a few cranberries and complete it by giving it a brief mist of mandarin oil over the drink.
